Pickled Watermelon Radish Wedges

Watermelon radishes cut into wedges and pickled in a light vinegar brine. The inside stays that deep magenta color after canning, so the jar looks as good as it tastes. Mild flavor, slightly sweet, with a satisfying crunch. Good on tacos, grain bowls, or a cheese board.
