Watermelon Jam

We puree ripe watermelon by hand and cook it down with just enough sugar and lemon to get a soft, spreadable jam. It tastes like watermelon, not candy. Good on toast, good with soft cheese, good straight off the spoon if nobody's watching. Made in small batches and water-bath canned the same week the fruit comes in.
